
Fastest Pancake Recipe in our House!! AKA Banana Pancakes
3 Ingredient Banana Pancakes – Worth the Encore!
Pretty often my daughter will say as we are eating something, “Mom you should take a picture of this and put it on your computer thing (blog/website).”
I thought for a moment, if Liesl thinks it is good enough to share then that is a pretty good litmus test for a recipe! We talked it over and decided that perhaps she should give her opinion so that all the kiddos out there can see that good for you food can be good tasting too!
So this morning we took a photo of her pancakes – which I have posted about before but we will go over the basics again today.

I love thinking about the ingredients all on their own. You could just eat 2 eggs, a handful of almonds and a banana ooooor….. blend them together and presto chango…….. Pancakes!!! Magical really.
2-3 Ingredient Pancakes
2 eggs
1 banana
optional but delicious – 1 Tblsp almond butter – or cashew or peanut butter
Use a hand blender or regular blender to get it all mixed up – stirring by hand might be hard, but with a little patience and elbow grease I am sure you can do it – but don’t take my word for it, I have not tried it 🙂

Yes those are blue eggs! We have chickens who lay blue and green eggs. I love that they match our counters!! Ha!

The hand blender/immersion blender is always a fun tool for kiddos to use in the kitchen! Nothing gets kids eating what you want faster than getting them involved!!
We usually leave it at that but any of these are great to sprinkle on top while the first side is cooking.
cinnamon – cardamom – flax seeds – hemp seeds – sesame seeds
So these babies are very delicate almost crepe-like, I recommend using a non-stick skillet or a very very well seasoned cast iron skillet or just grease up your pan with coconut oil.

These are very crepe-like and a bit difficult to flip but with a little patience you will get it! As much as I avoid non-stick stuff it really really makes this sooooo much easier.
Serve them up as is or with some fruit. We rarely put anything on them, just roll em up and eat!

These are very sweet all on their own so leave that syrup in the cupboard or fridge and enjoy all on its own or with some fresh fruit or unsweetened yogurt.

They are very good. Even if you don’t like bananas you will still like the pancakes. You don’t need butter or anything with them you can just eat them plain and they will still taste good. It is really easy and fast to make them and that is why I like to eat them some mornings. You should try them!
