During Super Bowl week we ate tons of avocados! This may be the one redeeming factor of the Super Bowl (for me), that the stores all have avocados on sale around the Super Bowl. Why, you ask? Guacamole and chips of course. So when this happens I take full advantage and we eat them like mad. I have a friend in CA who says she eats avocados on toast for breakfast and she thought that was boring. I had to tell her that it sounded absolutely decadent from my Northern MN standpoint!
Anyhow a couple of posts ago was my avocado pudding/mousse and now this! I adapted this recipe from one of my favorite sites ohsheglows and you will not be disappointed!
The sauce takes a matter of minutes. The only thing you will have to wait for is the pasta to cook!
Dreamy Avocado Basil Sauce
1 ripe avocado
1 Tbls dried basil
2 cloves garlic (we put 3 cloves and my daughter wanted more!)
1 tsp. lemon juice
1 Tbls olive oil
1/2 tsp. salt
1/4 cup coconut milk (or water) – more if needed to mix it up
2 cups salad greens
Blend in your blender or with the hand blender
Pour over your warm pasta – add salt if needed and Swoon! It is soooooo good 🙂
