Balsamic Beet Sauce….Dip?

Wow!  Talk about Radio active looking!  Really it is all natural!

I found the inspiration for this recipe in a Whole Living magazine.   They had a selection of recipes by color.   Each one looked amazing.  This is the only one we tried though.  I was a little afraid the beets would be overpowering but after tweaking the recipe and adding a good splash of balsamic vinegar it was stellar!  My daughter and her friend devoured this!  They kept sneaking in the kitchen and dipping anything they could find in it.

We enjoyed tortilla chips in it but really it was meant for pasta.

Wear a bib if you are not wearing black!

The recipe is so simple and so delicious.  The sauce is quite rich and very filling.

Balsamic Beet Sauce/Dip

3 large beets – roasted (my preferred way) or boiled till tender
1/4 cup olive oil
1/2 cup toasted walnuts
1/4 cup chopped sundried tomatoes (or cherry tomatoes are good too – different though)
2 Tbls balsamic vinegar

salt to taste

Blend it all up and pour over pasta or dip it or just eat spoonfuls!!!!
