Blueberry Ice Cream!
Dreaming of Summer! No I don’t have blueberries growing right now! In fact they are covered by many feet of snow currently, but this photo gives me hope!
Oh boy! I am getting serious Cabin Fever! We had a tiny little taste of spring a couple of weeks ago when it got up to “Gasp” 35 degrees Fahrenheit, then back down to the negatives again then up then down. I have really loved the awesome snow this year though. But still even the most hardy of us gets a little antsy this time of year.
So what is a girl to do? Ah ha!! Eat summer foods, like Blueberry Ice Cream! Luckily for us we still have a freezer full of berries from last summer’s garden. This happens every year. I freeze the berries, that we can’t stuff ourselves with, to squirrel away for these winter months. Then I am so stingy with them that we get to spring and we still have tons!!! Yay, blueberry, raspberry and strawberry extravaganza!!

I am sorry for those of you who will have to go to the store and buy blueberries now! I am totally spoiled with a freezer full!
So Blueberry Ice Cream it is!
3 cups frozen blueberries (or combination of berries)
1 can coconut milk (lite or full fat, whatever you like)
1/2 cup soaked dates
1/2 tsp vanilla (optional)
3 Tbls lucuma powder (optional)
(lemon zest would be so good too!)
Blend this all until it is smooth, taste to make sure it is sweet enough for you then pop it in your ice cream maker of choice! Or make popsicles!
