Stellar Garlic White Bean Dip/Spread

Bean Dip/Spread Challenge!! Treat yourself to this Garlic White Bean Dip!!

I love beans and I love to blend things!  Luckily for me these two put together make lovely things to eat!  I have  been experimenting with different combos of beans and herbs and spices to create new spreads for veg, fruit, sandwiches, crackers or whatever you like to eat dips and spreads with.

This is what I have discovered –  You really can’t go to wrong with beans and spices.  I do recommend staying in a particular genre of spices for each dip.  Beyond that really it is amazing the flexibility of the lovely unassuming bean!

Here is one recent combo that turned out to be a winner in my house.  We inhaled it!  This will be a staple for my summer gatherings I am sure of it!

Stellar Garlic White Bean Spread (hummus? dip?)
2 cups cooked (or canned and drained) white beans
1 tsp garlic powder
1 Tbls dried cilantro
1 tsp ground cumin
1 Tbls lime juice
1Tbls red wine vinegar
2 Tbls olive oil
salt to taste.
Blend  and add small amounts of water as needed.
As always add more of any of the ingredients as you make it to your taste!
Serve this with Apples, veg, crackers mmmmmmmmmmmmm………………..
lovely ingredients – you of course can use fresh herbs and it would probably be even more amazing!

you may need to scrape down the sides once or twice – add small amounts of water as needed
oh so good!  you must must must try this with apple slices!!!
