Gluten free primer #2 – Our favorite pancakes

Here is the next installment for your basic Gluten Free info.  See my previous post for more info on why some people ought not eat Gluten.

What is gluten? Gluten is a protein found in some grains these grains include – wheat, spelt, kamut, rye, barley

What about Oats? Well, oats do not contain gluten. However most oats are processed in plants that process other grains that contain gluten.  You can purchase clean oats and be assured that they are gluten free (bob’s red mill is a great resource for many gluten free products)

What is okay?  This is not an exhaustive list but it may be helpful in allaying your fears.
corn
rice
amaranth
millet
buckwheat (truly not related to wheat at all)
wild rice
beans
potatoes (all vegetables)
all fruits
all meats
all real spices (careful with spice mixtures)

My Favorite Pancakes
(this is not my recipe but I cannot for the life of me remember what site or book I originally found it)

2/3 cup brown rice flour
1/3 cup corn starch
1 Tbls sugar
1 tsp baking powder
pinch of salt
1 egg
2 Tbls oil
1/2 cup yogurt
1/2 cup milk (any kind will work)
(i love to add some cardamom about 1/2-1 tsp)

do not grease your skillet!  use a non-stick or really well seasoned cast iron pan

I think I love this recipe because my house does not smell like a diner when I am done (I have serious issues with fried food smells – oh well)

We like to lay the extras out on a cookie sheet and freeze them then stick them in bags for quick breakfasts. We just pop them in the toaster and slather with nut butters and we are on our way.  On occasion I have even used them in place of bread for a PB and J for the lunch box.

This is another great one for Sunday Brunch (mother’s day is coming up, these would be lovely in bed!!!)
