Healthy Valentine Treats!

Valentine’s Day is only a couple weeks away now, so I thought I would share some valentine treat ideas with you. Really you don’t have to wait for a special occasion for these lovely bites!
I was calling these Truffles with a Healthy Twist but a new name was in the making……..
The other day I had a friend over and we were enjoying the “truffles” with some tea (my daughter loves these). We were enjoying them very much and there were 2 left on the plate. My daughter very sweetly came up to me, batting her long eyelashes and said, “Mama there are 2 scruffles left on the plate. Who do you think should eat them?”. So holding in my giggles at her precociousness and fabulous new name for truffles, I told her that she should definitely eat one more of those “Scruffles”.
So the Scruffle is born! They taste better when you call them “Scruffles!!!”.
Scrumptious Scruffles!
1/2 cup black sesame seeds (or white)
1/2 cup sunflower seeds
1/2 cup toasted walnuts
1/2 cup coconut
Whizzzzzz all of these in the food pro or high speed blender
1/2 cup nut butter (any kind)
1 cup dates soaked in water till soft
1/2 cup cocoa powder
1 tsp peppermint extract
2 tsp vanilla
Whizz or blend
Put the two together, add a little water if needed, roll in to balls or press into heart shaped molds.
Roll in coconut or crushed nuts if you like
Store in fridge for up to 3 weeks (ha ha, as though they would still be around!)
