I have been scouring my old favorite blogs and many new favorite blogs lately. I am on a daily search for new and fun foods and ideas for shaking things up a little in my kitchen. I realize that most people probably eat the same few meals recycled throughout the month. Alas, I have this strange affliction of feeling like I need to make something new ALL THE TIME! This is odd because honestly I have been known to wear the same pair of pants 3 or 4 days in a row (what?). Anyhow…..
I found this skillet bread recipe on The Spunky Coconut the other day and I absolutely had to make it that very night. It sounded so strangely impossibly easy. And I had 2 cups of garbanzo beans that I needed to use up and didn’t feel like making hummus. This was perfect!
I monkeyed around with the spices a bit to go with my lovely Creamy Carrot Spread, Dip or whatever you want to call it. I changed them from Italian style spices to Indian spices mmmmmm… it worked beautifully 🙂
The photos do not do any part of this meal justice! It was delicious, if a bit brownish orange looking!

Creamy Carrot Spread
3 large carrots (either roasted or steamed till tender)
1/2 cup garbanzo beans
2-3 tbls tahini
1 tbls olive oil
1 tsp cumin
1/2 tsp corriander ground
1 tbls lemon juice
1-2 tsp honey
salt to taste
add a little water at a time if it won’t blend
Put it all in a blender and blend!!!!
