Do you get strange cravings for foods from your childhood? I haven’t had tuna salad for a long long time. You know the kind that you mix with noodles and serve on a piece of lettuce to make it fancy. So maybe this is a midwest thing, I don’t know.
To make a long story short, this Tuna Free and Nut free version has an eerie resemblance to that, and I am in love with it!!! Every person who tries it loves it too. I am very excited about this recipe and could eat it daily right now!
Mock Tuna Salad
1 cup raw sunflower seeds (soaked in water for 2-3 hours)
1/2 cup raw pepitas (also soaked for 2-3 hours) if you don’t have pepitas just use all sunflower seeds
1 cup celery diced or chopped in food pro
1/2 cup red onion diced or chopped in food pro
1 small clove garlic (or 1/2 tsp garlic powder)
optional – parsley chopped, 1 nori sheet crumbled in
Drain your seeds and whiz them in the food pro along with your garlic clove till they are coarsely ground, not a paste.
Take turns with the other ingredients pulsing and chopping in the food pro – adding each ingredient to a big bowl as you go along.
Stir it all together then squeeze the lemon on top. Sprinkle with herbamare (really lovely herby mix you can get at most natural food stores). Add in parsley and nori if you like. (nori will add that fishy taste if you like it, but it is really great without)
Mix and taste – add more lemon or herbamare if you like.
I like to eat this in romaine lettuce leaves or wrap it up in nori sushi wraps.
Or to eat more like a tuna salad add this to some pre cooked and cooled quinoa. If you do add this to quinoa you may want to add more lemon juice, herbamare and perhaps a touch of olive oil if it seems too dry.
*fyi you can make this with almonds too. just soak them over night then whiz them in the food pro and use them in place of the sunflower seeds*
*another option – not as clean of an option is to add a tablespoon of mayo of choice to really get that childhood flavor – I sometimes indulge.
