No-Bake Oatmeal Raisin Cookies
I have been meaning to post this recipe for a long time. It kind of goes along the same lines as the energy bites, as far as assembly goes. I am a big fan of nut balls and oat balls with dried fruit. When I am running to the gym for a class or heading out for a run just one or two of these are just perfect to get me through until after I am done sweating.
These are also great treats for kids. I can feel good about my daughter grabbing these for a snack. We love making these together.
The combinations are endless!
No Bake Oatmeal Cookies
1cup oats
1/2 cup dates (soaked if they are very dry)
1/2 cup raisins
1/2 tsp cinnamon
1/2 tsp ginger (optional)
1/2 tsp cardamom (optional)
1/2 tsp vanilla
water if needed
whizzzzz each ingredient in the food pro then mix and squash into balls!

I use whole dates and usually have to soak them or quickly boil them to make them soft and sticky. If you want to go totally raw soak them overnight. |

these are my favorite spices but use whatever you like. |
easy peasy! squash them into balls, patties, logs, whatever! the oats will continue to soak up water so don’t worry if your balls are a little sticky (store in the fridge) |

I'm guessing these are little like a a super-yummy homemade version of a Larabar 😉 It's so fun to connect with people with similar interests(health, wellness, cooking) and that live somewhere similar!(I'm not far from Rice Lake WI)
