Pumpkin Ice Cream with Caramelized Walnuts

I have been wanting to try my hand at pumpkin ice cream for weeks.  It lived up to all my long expectations for sure!!  This recipe is so easy!  Just blend and put it in your ice cream maker.  Done!

Simple ingredients, make a lovely creamy ice cream! I usually prefer organic ingredients but for some reason the organic canned pumpkin just doesn’t do it for me. So good old flavorite or your favorite canned pumpkin will do.

Pumpkin Ice Cream

1 can coconut milk

1 can pumpkin

1 tsp cinnamon – 1/2 tsp nutmeg  – 1 tsp ginger

1/2 cup your favorite sweetener (I think maple syrup would be amazing but I was all out.  I used honey)

*blend this all up and taste.  if it is not very sweet add more.  Remember frozen things do not taste as sweet as thawed things.

Follow the directions on your ice cream maker and DONE!!

 

 

Next for the walnuts.  I have made these for salads, and just to munch on.  They are highly addictive and so quick to make!

Here are your ingredients for the glaze on the walnuts.

Glazed Walnuts

Mix up about 2 Tbls agave – 1/4 tsp cinn  1/8 tsp nutmeg — set aside

Roast up some walnuts in a dry skillet until you can smell them or you see them slightly browning 3-5 minutes total

Pour the mixture over the hot walnuts and stir like crazy for a few seconds

Turn off the heat or remove from heat.  Keep Stirring.

Pour onto a plate or wherever you want to cool them off.

EAT!

* sprinkle just a little salt on there for a sweet salty delight!!*

Here are the walnuts all hot and toasted. Then drizzle on your glaze mixture.

See how bubbly it gets! This happens fast. Stir Stir Stir then turn off the heat. If it starts to smell burnt, quickly dump onto a plate or whatever to cool off.

Here they are cooling off. They will get harder the longer they sit
