Summer in a Jar, Cilantro Dressing!

Oh Sweet Summer where have you gone!  Oh yeah you are safely tucked away in my freezer!  Mmmmmmmmmmm!  This dressing is completely worth whatever price you have to pay for out of season cilantro!  It isn’t too far out of season,  except for here in Northern MN.

This recipe came by way of my dear friend Kristen and she was sure to tell me that it originally came from another friend David and who knows where before that!  This dressing has made it into my chili bowl, my grilled cheese sandwiches, my salads, bread dipped in it and on and on!

Summer in a Jar Cilantro Dressing/Sauce (my version)

3-4 Tbls Olive Oil
1 cup fresh cilantro (I have not tried this with dried cilantro – might work – try 1/2 cup)
1/4 cup lime juice
1/4 cup braggs liquid aminos or tamari
1 Tbl grated ginger (or 1 tsp ground ginger)
6 garlic cloves
1 1/2 Tbl ground cumin

whizzzzzz in the food processor!  Yum!!!!!
make many batches and pack in small jars to freeze and to thaw as needed!

Sorry for the lack of photos lately.  We were in a panic about having no space on our camera one moment when our little one was doing something oh sooooooo important and adorable we just started deleteing willy nilly and poof there went bunches of food photos.  Oh Well!
