Sweet and Salty Nut Recipe in 5 minutes flat!

Sometimes we just need to make something sweet and salty and satisfying NOW!  I have even made this super fast in the morning before work and school for a snack.  I love nuts in pretty much every shape and size.  This is a fun one that is super versatile as far as ingredients go.  I think I say that about every recipe I post!  Maybe that could be my cook book niche Versatile Eats! Oh, and no, I am not writing a cook book!  At least not a real hold in your hands book.  I do have aspirations for a few little e-books though.

Okay so are you ready for this deliciousness?

This is about 1 1/2 cups total of stuff. Our mix today was walnuts, pepitas, raw cashews, sunflower seeds, coconut and cacao nibs.

Throw them in a non stick pan or skillet, turn on med-high and stir for a few minutes until the nuts and seeds start to brown and smell really good, it might pop and smoke just a tiny bit. Then quickly pour maple syrup in and keep stirring and turn off heat. Stir till coated then sprinkle with sea salt and let cool/dry. It will get less sticky and more crisp as they cool.

Some things are starting to brown a bit.

Super Fast – like a Luge! Sweet and Salty Nuts

Handful of raw cashews

Handful of raw sunflower seeds

Handful of raw pepitas (pumpkin seeds)

Handful of coconut (flakes are best but unsweetened shredded is fine)

2 Tbls. maple syrup (or honey)

Sprinkle of salt

Add any dried fruits or other nuts or seeds you like! I think cacao nibs would be an outstanding addition!

Toss the nuts and coconut in a non-stick pan, cook on medium heat till they start to smell good and get a little brown (just a few minutes) At this point turn off the heat and quickly toss in the maple syrup and stir fast till they are coated – it will sizzle a bit.  Sprinkle with salt, let them cool then eat them!

This isn’t a great photo, because my camera was being picky then we ate most of them before I could get a good photo. Oh well, they were yummy!
