Wild Rice Salad with Winter Squash

black beans ready for action!

I am still loving the pressure cooker and this recipe features black beans a la pressure cooker! 

This recipe came about because I had left over Wild Rice, Steamed Squash and Black Beans. This is what I came up with.

Wild Rice Salad with Winter Squash Dressing
3 cups Cooked wild rice
1/2 cup cashews
1 apple chopped
1-2 cups cooked black beans
1/2 cup raisins
1 cup coconut milk
2 cups cooked squash
1 1/2 tsp cumin
1/2 tsp salt (more later if you want)
2 cloves garlic pressed
1 Tbls cilantro (dried)
1-2 Tbls lime juice
add more of any of the dressing ingredients as you like (this was my first try, I will add more garlic and lime next time!)
blend this all up and pour/stir into the salad – eat warm or cold

simply steam your squash if you don’t already have some cooked

leftover wild rice – looking sad and lonely and grey

ooooooh looking better all the time!

blend all of the dressing ingredients

yeah!  this is so beautiful and soooooo tasty!

stir it up and serve it up!

this would be great for a pot luck or barbeque
